2015 Chefs Hat Awarded

The team at Bistro Molines is very proud when the industry recognises its own.
One of the most sort-after accolades the industry offers is a full review in the annual SMH Good Food Guide. Even better is the receipt of one, two or (very rarely) three hats. There are a lot of Sydney hatted restaurants but not so many in the regions. So there was much excitement at the 2015 Good Food Guide Awards night in Sydney in September 2014 when the restaurant was awarded a chef’s hat for the sixth straight year in a row. This is significant in that there was just one other one-hat (Muse Kitchen) and one two-hat (Muse) awarded to Hunter Valley restaurants.
While it is a very great honour to receive a hat this is not what we at Bistro Molines are striving to achieve. Our philosophy is to provide our customers with the very best food, wine and service in a convivial atmosphere. This is what hospitality is all about.
People ask us if we wouldn’t like a second hat but Robert says, ‘Some people might be attracted by a second hat. I think that if we had another hat, then there would be so much more pressure to keep it – too much pressure on Sally and me and all the rest of the team. We would be worrying more about that extra hat, less about what we do best. One hat is plenty’.
